big vintage 1940s Culinary Arts cook book, old regional recipes

Dated 1947 'Regional Cook Book', published by the Culinary Arts Institute. This has some wear, but has an unusual and interesting assortment of specialties from different US regions - New England - Creole - Pennsylvania Dutch - Southern cooking and old Dixie favorites - Michigan Dutch (Holland, not Germany!) - Wisconsin Dutch (German) - Mississippi Valley - Minnesota Scandinavian recipes - South West Spanish American - and Western cookery, Pioneer and Modern.
