The Pastry Chef, a 1980s vintage textbook for the professional baker / cook's kitchen. This seems very complete, and gives very detailed recipe instruction which is hard to find these days. A great read for the interested amateur or reference book for the accomplished chef. Has some light soil and wear, but pages are not marked up.
